Gyokuro is the finest of the Japanese teas, normally only enjoyed on special occasions. It is enjoyed on its own after a meal or as an elevating, cleansing and refreshing drink. The manufacturing process is quite different from other teas as the tea bushes are covered for 2-3 weeks before plucking. This increases the level of amino acid and it decreases the level of catechin, which results in a unique and sweet taste. Gyokuro may be brewed at temperatures as low as 50-60°C. At these low temperatures, however, it is recommended to use a higher dosage of tea than normal. In Japan, you often make tea using the same leaves three times. You empty the tea pot, drink the tea and repeat the process twice. Three tasty and very different servings.
